What makes Babylon Dining authentic is how we draw inspiration for new dishes and food from real-life experiences.
With my origins in Algeria, I was lucky to grow up devouring my mother’s fantastic homemade food and delicious North African dishes.
Even though I was just a child, this inspiration continues to make a significant impression on my professional food journey.
My most unique dish to date remains a childhood-inspired North African-style lamb and dolma stuffed tomato. It featured local produce and meats marinated with authentic spices, making for a combination that frankly blew my guest away.
